A simple refreshing and tangy dessert that you can put together really quickly and tastes a lot better than the shop brought ones.

Pavlova is a great summer dessert, typically I do this with raspberries and strawberries but can be done with any summer fruits. This is an eggless version that uses Aquafaba which is the water from chickpeas. You can use the chickpeas to make Hummus. It has taken me a few attempts to get it right but this version seems to work consistently.

Based on the Chocolate Cake recipe, you can create desserts such as this delicious Blackcurrant and chocolate gateaux, filled with layers of blackcurrant, cream and ganache. It is based on the idea of a Black forest gateaux but with some changes.

I used to cheat and make this Raspberry Flan with a shop brought flan base, but they seem to have disappeared from the shelves, no matter – this one tastes better and you can make it yourself. This is a lovely refreshing dessert with raspberries or strawberries and best service with cream or yoghurt.
